The Opinel Carpaccio Knife features a light, razor-sharp blade that easily produces wafer-thin slices of raw, cured, or smoked meat and fish. Its narrow profile and flexibility also make it ideal for trimming off fat and skin. The anti-corrosive stainless steel blade's 1.5mm thickness and 30cm length allows for supple movement of back and forth. A riveted beech wood handle, which has been coated in a protective varnish for moisture-resistance, makes the knife comfortable to hold.
