A bain marie, also known as a ‘water bath’, is traditionally used in France to make chocolate, hollandaise sauce, terrines or custard, because it heats very gently. A bain marie also makes the best, most creamy slow-cooked scrambled eggs. Water is placed in the lower part of the pan and the ingredients are warmed in the upper pan.
