Product Details

WÜSTHOF knives have been manufactured in the city of Solingen, Germany since 1814. The company, which is still run by the founding family, takes quality very seriously – which explains why their knives consistently feature in 'best of' lists. Every knife in the Classic range is fully forged from a single piece of stainless steel so it has a full tang, which allows for excellent blade-to-handle balance. The high-carbon blade undergoes a process in which the steel’s molecular structure is realigned to be stronger and more robust, honed twice by hand and once by laser to ensure a perfect finish. This laser finish is the result of a proprietary technology called PEtec, which makes blades 20% sharper, with double the edge retention. The traditional riveted handle features a full bolster and finger guard, aiding the proper knife technique in which your thumb and forefinger grip the blade ('pinch grip'). This carving knife, which has air pockets that prevent food from sticking to its sides, can be used on its own or alongside the WÜSTHOF Classic Carving Fork. Available individually or as part of a carving set.

Why we love it

'In a Western-style knife, the weight of a blade does a lot of work, especially when cutting tough ingredients (meat with bones, swedes, or pineapples, for example). WÜSTHOF has mastered the balance between the weight of the blade and the handle, on top of having sharp and durable blades with excellent edge retention. The result is knives that are comfortable to hold and easy to control.'

About The Brand

Wusthof

For over 200 hundred years, the Wusthof has manufactured their knives in Solingen, Germany, known as the ‘City of Blades’. What started as a metalsmith making scissors in a cellar during the Napoleonic Wars is now an internationally recognized name for high-quality European blades. The company, which is still family-owned, produces no less than 1200 knives and kitchen accessories that vary in style and price range, but are consistent in high quality.

We love that they employ the most up-to-date procedures throughout the entire production process, consisting of:

  • Measuring the blades before sharpening using lasers
  • Calculating via computers the precise sharpening angle for each blade
  • Sharpening the blades on a whetstone using precision robots
  • Special final polishing of all blades using a special disc

If strict quality standards are not achieved, the knife is not approved for sale. That’s why Wusthof’s trident logo symbolises their three core values of passion, diligence, and perfection.
