Mauviel's M'Steel collection is crafted from 100% durable carbon steel. Carbon steel is lighter than cast iron for manoeuvrability. It heats quickly, making it an excellent material for searing, browning, stir-frying and grilling, but unsuitable for slow simmering. Pans in this collection work on all heat sources, including induction, and the oven.

This M'Steel Paella Pan features flared sides and two handles fastened with strong 18/10 stainless steel rivets. It's a versatile pan that can stand in for a wok to stir-fry veg, or as a griddle for searing steaks or cooking pancakes. Over time, the pan will become more stick-resistant, needing less fat, allowing for healthy and efficient cooking.

Naturally protected with beeswax to prevent any oxidation during transport, the pan must be washed and seasoned before first use. Read our guide on how to season a carbon steel pan.
