In this hands-on class, you'll learn the art of making Thai curry paste from scratch and gain an in-depth understanding of key Thai ingredients and their usage, like fish sauce, kaffir lime leaf, tamarind puree, shrimp paste, and more. The class starts with some knife skills before taking you through various cooking methods and seasoning tricks to improve flavour in Thai food and beyond. During class, we'll make Thai green curry with prawns and jasmine rice; whole-baked sea bass; and a crunchy salad with satay sauce, which you will enjoy at the end. Keep in mind these are templates rather than recipes, and we'll teach you how to apply the principles behind them to a plethora of other dishes.

Think this class would make a perfect gift? We do too – that's why we offer Cook School Gift Cards, for one or two guests, in paper and digital formats.
