Product Details
Borough Market's first cookbook, written by Ed Smith (of Rocket & Squash) takes you on a tour of a year at London's most famous market. These creative, impressive recipes, organised by season, include Chilled Asparagus Soup (Spring); Rolled Pork Belly and Sticky Nectarines (Summer); Beetroot Dal (Autumn); or Clementine Sponges with Cranberry Sauce (Winter). You’ll be introduced to key seasonal ingredients and learn shopping and preparation tips straight from the artisan producers. This book is packed full of beautiful photography, much of it shot on location at the Market throughout the year. Ed Smith is a regular contributor to Borough Market's print and online magazines. He also writes features for The FT Weekend Magazine, The Guardian, The Telegraph and various other publications.
Borough Market: The Knowledge Cookbook
Each of the book's eight chapters is devoted to a different category of stall you'll find at this historic market: fishmongers, butchers, two different sections on stalls offering cupboard ingredients (spices, pulses, dry goods), greengrocers, fruiterers, dairy, and baked goods. Their wisdom is shared via features, interviews, tips and guides that demystify unfamiliar ingredients and processes. It explains not just what to buy (and why), but how to store it, cook it and serve it. Each section includes relevant recipes by Angela Clutton, award-winning food writer, Borough Market Cookbook Club host and Borough Talks podcast presenter. The book includes over 80 recipes, with dishes like Parsnip Gnocchi and Smoked Garlic Butter, Moong Dal Dosa with Masala Potatoes and Tomato Chutney, and Jasmine Tea Loaf with Salted Lime Butter.
