The Borough Kitchen Collins

This is not your typical Tom Collins. Kelly, our Digital Content Editor and cocktail genius, adds Aperol, which contributes a hint of bitterness and gives the drink a lovely colour. Essential tools for this recipe include a cocktail shaker, highball or long drink glasses, and large pieces of ice (explore our range of ice cube moulds). We also recommend getting a water carbonator, so you can make club soda at home (see 'BK Tips'). To be the world's most loved party host, you could size up this recipe to fill a pitcher, and let guests fill their glasses with ice and add the club soda on their own. 

Makes 1 cocktail, doubles easily

Ingredients

75ml London Dry gin
35ml Aperol
30ml lemon juice
5ml (1 tsp) caster sugar
90-100ml cold club soda or sparkling water
1 orange slice, 1 cocktail cherry, for garnish

Method

  1. Measure gin, Aperol, lemon juice and sugar into a cocktail shaker.
  2. Add ice, close shaker and shake vigorously.
  3. Strain over fresh ice cubes in a 325-350ml highball or long drink glass.
  4. Top with club soda and garnish with an orange slice and a cherry.

BK Tips

  • To make club soda in a water carbonator, fill water up to the bottle's maximum line, add 1/8 tsp of bicarbonate of soda, and aerate the water until you have the desired amount of fizziness. 

  • Chill your glasses and use large ice cubes to keep ice cubes from melting too quickly.

  • Use a toothpick, small skewer, or even a small piece of dry spaghetti to hold the orange slice and cherry garnish together. 

  • This drink is strong, so sip with reverence and enjoy.
