Roasted Red Pepper Hummus
It’s difficult not to be going back for more with this delicious Roasted Red Pepper Humous. It’s the perfect healthy snack food and more versatile than you think. Serve as a dip with some warm flatbread and a selection of raw seasonal vegetables or try it as a base on pizza instead of tomato. You can mix it into your favourite pasta or add a dollop into soups or salad dressings to give them a flavour punch! It’s always a crowd pleaser and so simple to make.
Ingredients
- 1 small onion (finely chopped)
- 1/2 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp olive oil
- 400g chickpeas (drained and rinsed)
- 3 whole roasted red peppers
- 1/2 lemon rind and juice
- salt and pepper to taste
- pinch of chilli flakes
- 1/2 garlic clove
- 1 tbsp pomegranate molasses (optional)
Serve with:
Warm flatbreads
Fresh seasonal vegetables
Method:
- Heat the oil in a frying pan and add the onions. Cook over a medium heat until soft. Add the spices and cook for a further minute. Leave to cool
- Put all the remaining ingredients with the onion mixture into a blender/Vitamix and blend until smooth. You may need to add a bit of water to get the right consistency
- Check seasoning and spoon into serving bowl
