Alejandro's Gazpacho
With warmer weather just around the corner why not try a rustic summer Gazpacho? It’s a light and refreshing soup, packed full of flavour and simple to make; it’s a perfect way to start a meal on a hot summer day!
Ingredients
- 600g of tomatoes
- 1 large cucumber
- 2 red peppers
- 2 green peppers
- 1 medium size white onion
- 4 stalks of celery
- 1/2 cup of olive oil
- salt and pepper to taste
- crème fraîche to serve
Method:
- If using a Vitamix, start on a variable 1 and then increase slowly to variable 5 for around 30-45 seconds
- Otherwise, use a hand blender to blend the tomatoes first. Then add all the other ingredients and blend until you have reached the desired consistency
- For the best results, leave to rest in the fridge for a few hours (or, even better, overnight): the flavours improve if left to sit
- Serve with a swirl of crème fraîche
